What are gluten free foods

Gluten is a protein found in wheat, barley, rye and oats. The sources of gluten can be divided into two sections:

a. The obvious sources in the diet All wheat, barley, rye and oats. This is mainly in the form of wheat flour. Therefore food such as ordinary bread, pasta, cakes, biscuits, pastries, puddings and pies contains gluten. Oats can be included safely in the diet of some individuals with coeliac disease. It is important that advice regarding oats is obtained from your dietitian.

b. The hidden sources- Ingredients used in tins and packets of foods and drinks, Manufactured and processed foods. These can be the most difficult part to avoid. Wheat flour is commonly used as a processing aid, a binder, a filler or as a carrier for flavourings and spices. Foods can also, during manufacturing or processing, become contaminated with wheat flour. Therefore patients with coeliac disease need to check food labels for hidden sources. A life long diet of gluten free foods is the only treatment for coeliac disease.

What does a gluten free diet consist of?

Food a Coeliac can eat:
Many foods are naturally gluten free including rice, maize, potatoes, all kinds of vegetables and fruit, eggs, cheese, milk, meat and fish, nuts, seeds, pulses and beans as long as they are not cooked with or contaminated by wheat, barley or rye for example by being cooked with flour, batter, breadcrumbs or sauces.

Wine and spirits.

Any food specifically labelled as gluten-free. Beware - food labelling standards vary around the globe so it is not always safe to rely on ingredient labels in a strange country.

Spending time in a supermarket reading all the ingredients is not only time consuming but there is always the chance of selecting a product by misreading the ingredients, using it a suffering the consequential discomfort.
